The Ramos Gin Fizz.

Ramos Gin Fizz, Gin Cocktail, Orange Flower WaterConceived by Henry Ramos in the 1880s, there was originally much theatre involved in shaking the Ramos Gin Fizz for up to twelve minutes to thoroughly mix the ingredients. Gangs of bartenders worked together to keep up with service at the height of the cocktail’s popularity.

This luxurious cocktail achieves the difficult marriage of citrus and dairy. Managing to be rich, yet refreshing at the same time, it is the liquid equivalent of a delicious, light, lemon and lime cheesecake.

Gin…………………………………2 measures
Fresh Lemon Juice……….1/2 measure
Fresh Lime Juice………….1/2 measure
Sugar Syrup…………………3/4 measure
Cream……………………………..1 measure
Fresh Egg White……………….1 white
Orange Blossom Water…..2-3 dashes
Soda Water…………………………Top up

Long dry shake (without ice) all the ingredients except the soda water. Add ice and give a further long, hard shake. Strain into a glass without ice and top with soda water.
